Cucumber Garbanzo Bean Salad

Serves 4

  • 1 English cucumber, diced
  • 15 oz. can garbanzo beans, drained
  • ¼ cup parsley
  • 1/3 cup red onion, diced
  • 1/3 cup yellow bell pepper, diced
  • 3 Tbsp. Udo’s Oil (or flax seed oil)
  • 3 Tbsp. apple cider vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp. fresh lemon juice
  • ½ tsp. ground black pepper
  • ½ tsp. sea salt
  1. In a large bowl combine the cucumber, garbanzo beans, parsley, red onion and yellow pepper. 
  2. Combine Udo’s oil, apple cider vinegar, garlic, lemon juice, black pepper and sea salt in a blender to make the dressing.
  3. Toss dressing with the vegetables, chill for at least two hours and serve.
