I began our wellness discussion by talking about the importance of eating whole foods, but “spiritual nutrition” is just as essential and can feed us on a deeper level. Cook pasta according to package directions, drain, and rinse with cold water. Combine all dressing ingredients in a blender to make a vinaigrette dressing (refrigerate left-over). Toss pasta with vegetables and 1/2 cup of dressing.

Mix beef with garlic powder, pepper, Italian seasoning and parsley. Shape into 4 patties. Cook over medium-high heat, either in a skillet coated with olive oil spray, grill pan or on a grill, for at least 4 minutes on each side.

Principle 6: Sleep Yourself Healthy

Did you know that sleep plays a vital role in achieving optimal wellness??? Although many of us suffer from sleep deprivation, we actually need 7-9 hours of quality sleep each night for our bodies to repair themselves both physically and mentally. Bottom line, not getting enough sleep can greatly affect your health, mood, weight, immunity, brain function and even your sex life.

Recipe of the Week: Turkey Meatballs

Combine all the ingredients except the olive oil in a large mixing bowl and shape into about 30 meatballs 1 inch across. Spray a large nonstick skillet generously with olive oil. Cook the meatballs for 5 to 6 minutes, working in batches if your pan is not large enough to fit them all, occasionally moving them around to brown all sides.

Marinate 4 chicken breasts in 2 Tbsp. olive oil and Mexican Seasoning blend and cover in the refrigerator for at least two hours. Place chicken in a crockpot and cover with sliced bell peppers, mushrooms, onion and chicken broth. Cook on High for 3 1/2 hours (can also make on low for 7 hours).

Principle Four: Incorporate Healthy Fats

Monounsaturated fats (olive oil, avocados, nuts) and polyunsaturated fats (Omega-6 and Omega-3) have a tremendously positive effect on your health, when eaten in moderation. Omega-6 (sunflower oil, corn oil, safflower oil) and Omega-3 (salmon, flax seeds, walnuts) fats are called “essential” fatty acids (EFAs) because our bodies need them, but cannot manufacture them.
