INGREDIENTS
- 1/2 cup cremini mushrooms, thinly sliced
- 1/3 cup shallots, minced
- 1 tablespoon sesame oil
- 1 quart vegetable stock and 1 cup water
- 3 tablespoons miso paste
- 3 tablespoons scallion, sliced
- 1/4 cup firm tofu, diced
- Pinch of salt and pepper to taste
DIRECTIONS
- In a medium saucepan, heat sesame oil and then cook mushrooms. Add in shallots and cook until translucent.
- Deglaze with vegetable stock and water then bring to a boil. Simmer for 5 minutes and add tofu to heat through.
- Place miso in four bowls and top with scallions. Serve with a mixed greens side salad and ECW Vinaigrette Dressing.
