Miso is a fermented paste that has been used in Japanese cooking for centuries to add flavor to many dishes. Enjoy this Miso Soup recipe any time – before a meal or as a midday snack. Makes 4 Servings 

INGREDIENTS

  • 1/2 cup cremini mushrooms, thinly sliced
  • 1/3 cup shallots, minced
  • 1 tablespoon sesame oil
  • 1 quart vegetable stock and 1 cup water
  • 3 tablespoons miso paste 
  • 3 tablespoons scallion, sliced
  • 1/4 cup firm tofu, diced
  • Pinch of salt and pepper to taste

DIRECTIONS

  1. In a medium saucepan, heat sesame oil and then cook mushrooms. Add in shallots and cook until translucent. 
  2. Deglaze with vegetable stock and water then bring to a boil. Simmer for 5 minutes and add tofu to heat through.
  3. Place miso in four bowls and top with scallions. Serve with a mixed greens side salad and ECW Vinaigrette Dressing.
