• 1 can organic black beans, rinsed and drained
  • ¼ cup dry whole-wheat or gluten-free bread crumbs
  • 1 green onion finely chopped
  • 1 egg (omit if making vegan)
  • 1 Tbsp. olive oil
  1. Pour 1 Tbsp. of olive oil in a large skillet over medium heat.
  2. Mash the beans with a fork in a large bowl, almost completely but leave some beans whole. Add the bread crumbs, whisked egg and green onion and mix thoroughly.
  3. Using a spatula, divide the mixture into two parts and form patties.
  4. Cook about four minutes on each side, flipping when you can see the bottom is browning and the burgers are sticking together.
  5. Serve with sautéed onion and mushrooms or raw lettuce, onion and tomato open-faced on one slice of sprouted-grain bread or whole-wheat bread.
