• ½ lb. deli sliced turkey breast (or use leftover roast turkey)
  • 1 Tbsp. minced red onion
  • ¼ cup chopped celery
  • ¼ cup chopped green apple
  • 1 Tbsp. minced dried cranberries
  • ½ tsp. garlic granules
  • 3 Tbsp. canola oil mayonnaise
  • 1 Tbsp. nonfat sour cream
  • ½ tsp. Dijon mustard
  • 1 Tbsp. distilled white vinegar
  • Pinch of dried thyme
  • Pinch of sea salt
  • Pinch of ground black pepper
  • 6 10-inch whole-wheat or sprouted grain tortillas
  • 1 ½ cup spinach
  1. Combine all ingredients except the spinach and tortillas in a large bowl and mix well.
  2. Place the turkey mixture in the food processor and pulse for 2 to 3 seconds at a time until mixture is finely diced.
  3. Lay the tortillas on a flat surface. Spread ¼ cup spinach on each. Place ¼ cup turkey mixture on top the spinach. Roll up burrito style.
