- ½ lb. deli sliced turkey breast (or use leftover roast turkey)
- 1 Tbsp. minced red onion
- ¼ cup chopped celery
- ¼ cup chopped green apple
- 1 Tbsp. minced dried cranberries
- ½ tsp. garlic granules
- 3 Tbsp. canola oil mayonnaise
- 1 Tbsp. nonfat sour cream
- ½ tsp. Dijon mustard
- 1 Tbsp. distilled white vinegar
- Pinch of dried thyme
- Pinch of sea salt
- Pinch of ground black pepper
- 6 10-inch whole-wheat or sprouted grain tortillas
- 1 ½ cup spinach
- Combine all ingredients except the spinach and tortillas in a large bowl and mix well.
- Place the turkey mixture in the food processor and pulse for 2 to 3 seconds at a time until mixture is finely diced.
- Lay the tortillas on a flat surface. Spread ¼ cup spinach on each. Place ¼ cup turkey mixture on top the spinach. Roll up burrito style.
