Serves 4
- 1 English cucumber, diced
- 15 oz. can garbanzo beans, drained
- ¼ cup parsley
- 1/3 cup red onion, diced
- 1/3 cup yellow bell pepper, diced
- 3 Tbsp. Udo’s Oil (or flax seed oil)
- 3 Tbsp. apple cider vinegar
- 2 garlic cloves, minced
- 1 Tbsp. fresh lemon juice
- ½ tsp. ground black pepper
- ½ tsp. sea salt
- In a large bowl combine the cucumber, garbanzo beans, parsley, red onion and yellow pepper.
- Combine Udo’s oil, apple cider vinegar, garlic, lemon juice, black pepper and sea salt in a blender to make the dressing.
- Toss dressing with the vegetables, chill for at least two hours and serve.
