Because asparagus is packed with nutrients, including vitamins A, C, E, K, and B6, folate, potassium, copper, iron, calcium, protein, and it is also antioxidant-rich. This Roasted Asparagus recipe is simple and a crowd pleaser.

Makes 4 Servings 


  • 1 pound asparagus
  • 2 tablespoons olive oil
  • Salt and red pepper to taste 


  1. Preheat oven to 400 degrees. 
  2. Line a baking sheet with parchment paper or a silk pad.
  3. Toss asparagus with olive oil, salt, and red pepper. Be sure to space out so the asparagus are not touching.
  4. Roast for 10-12 minutes.
