peppers-1300830_960_720 Serves 4

  • 2 Green Bell Peppers and 2 Red Bell Peppers
  • 1 lb. ground lean grass-fed beef or bison (may substitute ground turkey)
  • Black pepper and salt to taste
  • 2 Tablespoons olive oil, divided
  • 1/4 cup yellow bell peppers, chopped*
  • 1/4 cup white button mushrooms, chopped
  • 2 handfuls raw spinach
  • 1 cup cooked brown rice
  • 1 and 1/2 cups tomato sauce, divided
  • 3/4 cup part-skim mozzarella cheese, shredded
  1. Preheat oven to 350 degrees.
  2. Cut off the tops of the peppers and clean out the seeds. Boil a pot of water and cook the peppers for 4-5 minutes. Drain and set aside.
  3. Heat a sauté pan with 1 Tablespoon olive oil. Season beef with salt and pepper to taste and sauté till cooked through. Drain excess liquid.
  4. Heat a skillet with remaining olive oil and sauté yellow bell peppers and mushrooms until cooked through, then add spinach.
  5. Combine beef, veggie mix and rice in a mixing bowl.
  6. Place peppers in an oven safe dish greasing the pan with olive oil or cooking spray.
  7. Fill one pepper for your pup without the tomato sauce and cheese.
  8. Add one cup of the tomato sauce to the mixing bowl, combine and stuff the remaining three peppers.
  9. Top each of the three peppers with 2 Tablespoons of tomato sauce and 1/4 cup mozzarella cheese.
  10. Cook for 20 minutes until cheese is melted.

*May substitute onion and 1-2 minced garlic cloves if not sharing with your dog.
