Makes 2 Servings

Salad:

  • 6 oz. can water-packed tuna
  • 2 tablespoons red bell pepper, diced
  • 2 tablespoons yellow bell pepper, diced
  • 2 tablespoons red onion, diced
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons avocado mayonnaise (Primal Kitchen)
  • ½ teaspoon Dijon mustard
  • Sea salt and black pepper to taste

Mix together and refrigerate.

  • 2 cups berries or melons
  • ½ cup cottage cheese
  • 4 Boston lettuce leaves
  • 1 tomato, sliced
  1. Place ½ cup tuna salad on two Boston lettuce leaves and two tomato slices.
  2. Serve with 1 cup fruit and ¼ cup cottage cheese.
