Enjoy a turkey apple wrap for lunch or slice into pinwheels for an afternoon snack or a shared dish at a gathering.


  • 1/2 lb. deli sliced turkey breast (or use leftover roast turkey)
  • 1 tablespoon red onion, minced
  • 1/4 cup chopped celery
  • 1/4 cup chopped green apple
  • 1 tablespoon dried cranberries, minced
  • 1/4 teaspoon garlic granules
  • 3 tablespoon avocado oil mayonnaise (i.e., Primal Kitchen)
  • 1 tablespoon Greek yogurt
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon distilled white vinegar
  • Pinch of dried thyme
  • Pinch of sea salt
  • Pinch of ground black pepper
  • 6 10-inch whole-wheat or sprouted grain tortillas
  • 1 1/2 cups spinach


  1. Combine all ingredients except the spinach and tortillas in a large bowl and mix well.
  2. Place the turkey mixture in the food processor and pulse for 2 to 3 seconds at a time until mixture is finely diced. Alternatively, combine by hand in a mixing bowl.
  3. Lay the tortillas on a flat surface. Spread 1⁄4 cup spinach on each. Place 1⁄4 cup turkey mixture on top the spinach. Roll up burrito style.
